Stuffed vine leaves - Etli Yaprak Dolma

 
I don't know any body doesnt like to eat this food, even you are Turkish or not. This is one of the best food in Turkish cuisine.

It is not so easy to make, it takes time but once you do, you will always wanna eat.

Ingredients:

  • 300-400 gr vine leaves
  • 2 middle size onions - chopped
  • 300-350 gr beef mince
  • 1 cup rice
  • 3 tbsp vegetable or canola oil
  • 2-3 tomato sauce(it depends how much you like)
  • 2-3 tsp salt
  • 2-3 tsp pepper
  • 3 cups of hot water
  • yoğurt

Preparation:
  • Firstly boil vine leaves 10 minutes as they can be really salty and then put them in a colander and let them cool
  • wash the rice
  • take a large pot and mix chopped onions,tomato sauce, oil, salt and pepper
  • add the mince to the mixture and mix all the ingredients well
  • put one vine leave in a flat surface, put some ingredients and roll the leaves. dont let the ingredient flow from the leaves
  • align the stuffed leaves into pot without leaving any gaps
  • put 1 tbsp of olive oil at the top and put the hot water
  • put a small cover and then put the pots cover
  • let it cook 45 minutes in a low heat
  • check your meal time time when you see the water is not enough and your meal hasnt cooked yet add some more
when the meal is ready, put some yougurt and if you want more tomato sauce when you are serving...

Mung Bean Salad

I love eating healthy food and this is one of my favorites... 
You can add whatever you want but if you are sometimes counting calories, pls dont start with carbs.
Ingredients:
• 1 cup washed mung beans
• 1 cup peeled and chopped red beat
• 1 cup pickles
• 1/4 cup chopped dill
• 2 tbsp olive oil
• 1 tbsp vinegar
• 1 tbsp lemon juice
• 2 cloves of garlic 
• 1 tsp salt
• 1 tsp pepper

Preparation:
• boil mung beans and read beat in two seperate pots 
• when they are boiled enough filter them and mix them together in a bowl
• let them cool 
• mash garlics and chop them
• in a small pot get salt, pepper, vinegar, olive oil and garlic
• put all the ingredients together and finallly add the dills
